Sometimes, you've got to take time to celebrate small victories. For years, I've been trying to figure out how to make an omelet, and for years, my valiant attempts have ended miserably. Sure, it's fully cooked and edible, but not so satisfying. Usually, my "omelets" fall apart as I try to flip them. But today, I finally managed to cook an omelet that stayed in one piece! Here are a few tips that I've figured out in my omelet-making career:
1. Cook your omelet slowly! I'd day low-to-medium/low.
2. Make sure to spray a little olive oil or cooking spray in your pan. It makes flipping so much easier!
3. Let the cheese melt a little before folding over your omelet.
4. Better to overcook than undercook. Nobody likes food poisoning.

She's a funny one...
I added black beans, red bell pepper, and yellow onion to my omelet. A great brunch!
